This. Sounds. Amazing.

Just forwarded this recipe to the newly "retired" wife.

Alright, so I wanted cereal but we didn't have any....As I looked up in my pantry I spotted some Oreo cookies, And then it hit me....

As I wandered across the kitchen to the fridge I asked myself, "can this be done?" ....

I grabbed some milk, and then a bowl, and then proceeded to smash up some Oreos.

At first, I was nervous, who wouldn't be? But as soon as I saw the milk change colors I knew.

I knew that this would be delightful....

As I went for the first bite in excitement, I missed my mouth. Luckily it wasn't to bad and I didnt manage to spill much. As soon as it hit my taste buds I knew I was on to something special.

Sure...easy as pie err enchiladas...

Throw 2 pounds or so worth of cleaned chicken breasts in a crock pot with a cut up onion and enough green verde (sauce you can get in a can or jar...I use 4 Herdez 7 oz. cans) to cover all the chicken. Season with salt and pepper to your liking. Let it go as long as possible while shredding chicken once after a few hours to help it along.

Heat oven to 350 and while its preheating, portion out the chicken/onion mixture onto tortillas with some cheese in each. Roll them like cigars and line 'em in a pan. Once pan is full and lined with 10-16 enchiladas, dump the rest of the onion/green verde liquid over the enchiladas. Then top with cheese (I used a whole bag here) and throw in the oven for 10-15 minutes. I load 'em with sour cream, salsa and Tabasco's green sauce and then go to town!!

Sounds easy, is easy and they are insane!!!

Oh man, can't thank you enough. Made these tonight for my birthday party. They were a huge hit! Sooooooo good. Thanks!

This is a rather common recipe, but for those that aren't aware... it's called Taco Soup, great for football games! I know, because this is usually what I'm eating while watching the afternoon games.

What You're Going To Need:

1 lb. extra lean ground beef (93% lean or leaner)

1 onion, chopped

4-5 cloves garlic, minced

1.25-oz. packet taco seasoning (about 1/4 c.)

3 c. water, divided

56-oz. diced tomatoes

15-oz. tomato sauce

30-oz. kidney beans, rinsed and drained

1 can corn, drained

1.25-oz. Ranch dressing powder mix

What You Need To Do:

Brown the ground beef, drain & rinse. If you're health nut like me, I recommend boiling the hamburger, this will force the fats & oils that cook off to rise to the top of the water.

Then, simply, mix the ground beef and the remaining ingredients (except the water) into a crock pot or large cooking pot and let it simmer for a couple of hours. Stir occasionally. The water is to keep it from drying out while it cooks.

Some of the more traditional toppings I've used in the past:

Pico de Gallo, light sour cream, shredded cheese, crushed tortilla chips, tortilla strips, guacamole

Eat it with a spoon like a traditional soup, or use it as a tortilla chip dip. Either way, it's awesome!

I've never thought of that. Kinda like those uncrustables things.

It is amazing how good frozen PBJ is lol I have a gizmo that makes it so you can cut them in circles like the uncrustables. My sons will kill a box of those for lunch so I make my own anyway it's a lot cheaper. My youngest will take 2 or 3 of those for breakfast to school.

Today, my dude. How long should I let the chicken cook? 4 hours? 6?

Low or high setting?

Hurry! Its 6pm already, lol. Late night enchiladas anyone?

Oh....and I used this because I could not find the brand you mentioned. Should be just as good I think.

....and added these to get that "chunk factor" of your verde sauce......

Im sure youre already underway, but as low and slow as you can. Ive done both, however. 4 hours at high or 6 at low. Just make sure you get in there after 2 or 3 hours and shred that chicken manually. Helps with getting all the juices flowing and making it nice and tender.

Looking forward to a review in a few...

Yeah. No doubt. I turned it on at 6ish on high. I'll do it for 5 hours and switch it to low at the 2.5 hr mark. Math. I did some right there.

I don't like that sentence structure. But we pirates love to eat at midnight when the stars are out.
