Sure...easy as [s]pie[/s] err enchiladas...

Throw 2 pounds or so worth of cleaned chicken breasts in a crock pot with a cut up onion and enough green verde (sauce you can get in a can or jar...I use 4 Herdez 7 oz. cans) to cover all the chicken. Season with salt and pepper to your liking. Let it go as long as possible while shredding chicken once after a few hours to help it along.

Heat oven to 350 and while its preheating, portion out the chicken/onion mixture onto tortillas with some cheese in each. Roll them like cigars and line 'em in a pan. Once pan is full and lined with 10-16 enchiladas, dump the rest of the onion/green verde liquid over the enchiladas. Then top with cheese (I used a whole bag here) and throw in the oven for 10-15 minutes. I load 'em with sour cream, salsa and Tabasco's green sauce and then go to town!!

Sounds easy, is easy and are insane!!!
