Super Bowl Eats

We're going over to my in-laws for the Super Bowl and I volunteered to brings the snacks. We always do the typical chips/dip, veggie tray, hot wings and I thought this year I'd do something a little different. So I'm curious, what are your favorites? Any ideas are welcome, even if I don't use them someone else might. For me, I need moderately low salt and low fat for my father in law.

I make a good taco dip, if you sub fat free refried beans, reduced fat sour sour ream, and low fat cheese its not too bad and still tastes good. Baked barbeq chicken bites are also good.

This is an amazing Kraft recipe that i modified

1 can (6 oz.) white crabmeat, drained, flaked(use iimtation crab legs 12 oz)

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened

1/4 cup thinly sliced green onions (or minced onions)

1/4 cup KRAFT Mayo Light Mayonnaise

24 won ton wrappers

PREHEAT oven to 350

Thank you Drkraven! I saw something similar to the crab puffs but it was deep-fried. Your version sounds perfect as does the taco dip and yes, I can tell you love to cook.

Birdfan - I agree, low fat is killing most of our usual selections. He's already had mitral valve surgery once and may be facing it again so I really want to be careful this year.

Jamal - we usually do pizza but for the reason I gave Birdfan I want to try something different.

My mom makes this great, simple nacho dip. Bottom layer of cream cheese, then salsa on top of that followed by cheddar cheese. Throw the whole thing in the oven until the cheese melts and enjoy!

Both recipes are simple--thats the way I cook :D All 3 of my sons cook.

The cool thing with the taco dip is if someone hates olives, you can leave them off one end and double the tomatoes. I think on Sunday I am going to do the wontons with taco meat, because I have a milk allergic son.

I'm doing this too, I think.

I'm just gonna go to the grocery store, buy all the ingredients, lay them out for her, and then have her make 'em.

Cut and paste into an e-mail! I cheat all my recipes on in a folder on my computer so I print as needed. Food on the laptop screen--NOT COOL. I'm pushing for a terminal in my kitchen with a scanner to generate grocery lists. My stepson has been living with us to get ahead and he uses up the weirdest stuff--like Tabasco, which i use mostly during football season for my sloppy joe's and beef barbeq, and Worstshire --my husband had to run out twice when I was getting ready for tailgate and replace them.

Exactly. I'm lazy. :)

Besides, if I made them myself, they'd turn out horrible. Trust me on this. You DON'T wanna read about a 4-alarm fire up here in Delaware in the paper later. :P

Okay, here's how I make my famous white-bean chicken chili. It's low fat and you can use low-salt diced tomatoes to keep the sodium down a bit. Also, the white beans seem to cause less "side effects" than those red beans. :o

First...buy LAWRY'S Chili Seasoning packets. Don't use some other brand. Most of them are nasty and none of them will come out as good as this. Giant sells the Lawry's in their meat department; I don't know where else you can get it. I usually buy it in bulk on-line.

I triple this recipe when I'm making it for tailgate and there's never any left. I always double it even if I'm just cooking for home because it freezes well.

1 package Lawry's Chili Seasoning

1 small white onion, diced. (You can use a yellow onion, but white is perkier)

1 pound ground chicken (try to get the white meat, but mixed will do...just higher fat)

1 can diced tomatoes (I like the petite diced)

1 can white (Cannelllini) beans (I like Goya brand)

1 cup water

tiny little bit of olive oil or olive oil cooking spray

In a large non-stick skillet, add just enough olive oil or spray to dampen the bottom. Set the heat to just above medium.

Saute the diced onion until almost soft then add the ground chicken. Cook that until pretty well done, breaking it up as you go along.

Add the Lawry's seasoning and mix well. The mixture will be pretty goopy at this point, but don't worry.

As soon as the seasoning is mixed in the with chicken and onion, add the water, the tomatoes, and then the beans.

Stir well.

Reduce heat and simmer uncovered for 15 minutes OR dump it all into a crockpot and cook it on low for 6 to 12 hours.

When tripling it, I make one batch at a time and then dump it all together into a crockpot. Working with a triple batch makes it hard to brown the chicken and stir in the seasonings.

Serve with cheeze crackers, diced raw onion, and (reduced fat) Mexican-blend grated cheeze (not the kind with seasoning already added).

Dont know about low salt and low fat. Guess you could get him some Smart Pop popcorn. I am not watching the Superbowl this year but last year we made some Hamburger Helper "Cheesy Enchalida" and used that as dip for Tostito's. We had pizza, hot wings, sea food salad, deviled eggs, and my boyfriends dad made BBQ and grilled chicken. I dont recommend using the grill in January but whatever floats your boat, it was good.

Great replies so far!

My girls and I brainstormed a tentative menu this afternoon -

veggies with fat-free Ranch dip

fruit tray with some kind of dip

cheeseball and reduced-fat crackers

Drkraven's taco dip with reduced-fat tortilla chips

Drkraven's crab bites

chicken kabobs using Matt Stover's mesquite lime chicken recipe (Raven's website) and some done with hot wing sauce.

For the veggies we're doing baby carrots, cauliflower florets, red bell peppers, and blanched green beans with black olive garnish. For the fruit we're doing apple slices, pineapple chucks, grapes, and sliced kiwi, maybe strawberries if I can find any that are good.

This sounds REALLY good! I'll have to make it one night for the girls and I. (Hubby is the pickiest eater on the planet so he doesn't get any.)

I made those Won Ton crabber things. I ate about 15 of the 24 and still hungry lol. Those little things are real good. I tried to take a bite out of them...I guess I learned that you have to eat it whole instead.

Naw, its my protest to what the NFL has become. I am gonna grab one of my new text books and study :o . I cant believe I just said that.

we are watching for the commercials, and those wonton things are addictive :lol: we made 6 trays of them one game. (yes there were a bunch of us). I always got stuck with blackbottoms for every PTA of Family thing, so I got smart and bought a 24 and 36 mini muffin pans and now I found another use for the trays besides cup cakes and muffins :P If you like the wontons you will like this

"crabdip"

Ingredients:

1 1/2 cups shredded Cheddar cheese, divided

3/4 cup mayonnaise

1 1/2 teaspoons Old Bay

1 teaspoon Worcestershire sauce

1/4 teaspoon ground mustard

1 pound fresh lump crabmeat*, picked over or 2 cans (6 ounces each) crabmeat (use the sea sticks/crablegs I think they are better 12 oz anyway and I just chop them with kitchen shears)

Directions:

1. Mix 3/4 cup of the cheese, mayonnaise, Old Bay Seasoning, Worcestershire sauce and ground mustard until well blended. Gently stir in crab meat.

2. Spoon mixture into 1-quart casserole. Sprinkle with 3/4 cup cheese and a dash of Old Bay Seasoning.

2. Bake in 350

Dude, I have 3 sons that range in age from 12 to (its aftermidnite) 21. All 3 of them can cook, my 15 yo made dinner tonite. Rice was a bit underdone but it was edible.

My favorite Super Bowl Snacks are Wings,chips buffalo chicken dip gatorade Soda and so many other things the super Bowl aint just about the game its about the food too!!
